Crabby Birthday








Just a few detail shots from a 60th birthday party I shot this past weekend.
I loved the crab theme perfect for a nice Eastern Shore summertime party.
Thanks to Natalie and family for letting me take part in your family's special day!

This week I am finishing up some birthday present shopping
and slowly knocking more things off of my maternity leave list.
Working on adding a few more things to my Etsy shop. Stay tuned for that.

Coconut Banana Bread w/Lime Glaze.. mmm


Hello!! It's Recipe time





Thought I'd share the recipe I was telling you about. Hope you try it!
We had a nice weekend despite the heat.
I took photos for a 60th birthday party on Saturday and Sunday we just
hung out. Looking forward to this weekend! My brother and family are visiting.
Maddie can't wait to see her cousin.


Coconut Banana Bread with Lime Glaze
(Recipe from www.ourbestbites.com)

2 C Flour
3/4 tsp baking soda
1/2tsp salt
1 C Sugar
1/4 C (4tbs) real butter, softened
2 Large eggs
1 1/2 C Mashed ripe bananas (about 4 large bananas)
1/4 C Sour cream or Plain yogurt
4 Tbs apple juice or milk
1 tsp Vanilla Extract
1/2 C Coconut

Topping 2 Tbs additional coconut
Glaze 1/2 C powdered sugar whisked with 1 1/2 Tbs fresh lime juice

Preheat oven to 350 Degrees

Whisk Flour, Baking soda and salt together and set aside

In a large mixing bowl, beat butter and sugar until blended. Add eggs and beat to combine. Add banana, sour cream or yogurt, apple juice (or milk) and vanilla. Beat until blended. Add flour mixture and beat at a low speed until just combined. Stir in 1/2 C coconut.

Pour batter into a  9x5 loaf pan that has been sprayed with non stick spray. Sprinkle additional 2 Tbs of coconut on top.

Bake in oven for about 1 hour or until a knife or skewer
 inserted in center comes out clean. Check bread after about 40 minutes. If the top has browned and the coconut pieces are looking toasty, cover top of bread lightly with a piece of foil. Continue baking until done.

When done, remove pan from oven.
 Let cool on a cooling rack for 10 minutes and then
carefully remove from pan. 
Whisk powdered sugar and lime juice together for the glaze and
then drizzle over top. Cool for another 15 minutes before slicing.

I am told this is normal by the dr...lol

OC Boardwalk

We took a trip to Oc to hit the boardwalk to spend the day
this past week. We have been wanting to take Maddie on some good kiddie rides. The ones at the local fairs haven't been real good. The ones at the fair
across the street broken down on us. Not fun. Anyway, we hit on the Trumper Amusement rides on the boardwalk. We started with the indoor ones. Which it was like stepping into a time warp. These were the exact same rides my brother and I have rode on when we were little I've seen them in photos. 
Everything is in pretty good shape thou. I was impressed.. 
Maddie loved the rides she cracked me up she's so adventurous sometimes
she wanted to go on the bumper cars, the huge roller coaster & the zipper 
whoa girl ! 
We then ate lunch at the Dough roller & later stopped at
 Dairy Queen for an ice cream.

Jerk Recipe






As promised here is the Jamaican Jerk Seasoning Blend Recipe
(recipe from Coastal Living Mag)

Prep: 5 Minutes

1 Tablespoon Garlic powder
2 to 3 Teaspoons Cayenne pepper
2 Teaspoons Onion powder
2 Teaspoons Dried Thyme
2 Teaspoons Dried Parsley
2 Teaspoons Sugar
2 Teaspoons Salt
1 Teaspoon Paprika
1 Teaspoon Ground Allspice
1/2 Teaspoon Black Pepper
1/2 Teaspoon Dried Crushed Red Pepper
1/2 Teaspoon Ground Nutmeg
1/4 Ground Cinnamon

Combine all ingredients; store in an airtight container for up to 3 months
(I stored mine in my Pampered Chef prep bowls, 
they were the perfect size for this)
Makes 1/2 cup

We coated our chopped up chix breasts in Olive Oil then
 rubbed on the Jerk seasonings and put them in our grill bowl along
with some chopped up Red Pepper & Green Pepper strips and Onion
When it was finished cooking on the grill we put our over top of rice
It turned out pretty awesome. In fact I am ready to cook some more already.
Thinking I might get some small mason jars and mix up some batches of this Jerk seasoning to give out as a little Christmas gift, maybe with some Red Stripe Beer or Grilling stuff.. hmm lots of ideas

We took Maddie to the Beach to ride some kiddie rides.
She had a ball; can't wait to share.

Changes ?



Well we've decided to try and sell our house
Even thou the market is crappy we thought we'd give it a go
No real game plan just looking to simplify and downsize
We'd love to eventually move to North Carolina but are waiting for the right time
we've narrowed down an area just need to keep an eye on jobs right now.
In the meantime if we can sell it we'll probably buy a cheap house or rent.

Time flies Glad it still fits.
This week we've been busy hitting the local fair, 
couple dinner & lunch dates with some work friends. 
Mixed with the usual laundry, cleaning and other household chores.
Not much else today to share. 
But oh I see the sunflowers are bloomed opening to hit up
a field down the street for some photos.
Maybe I can get Maddie to come with me.
